1/2 cup plus 1/4 cup sugar
6 large egg yolks
4 large egg whites
1 teaspoon vanilla extract
1/2 cup plus 1 tablespoon cake flour, sifted
Directions
Heat the oven to 325 degrees.
Spray a 12 1/2 x 17 1/2 x 1 inch baking pan lightly with cooking spray. Line the bottom of the pan with parchment paper and lightly spray the paper with cooking spray.
In a large mixing bowl, whip 1/2 cup sugar with the egg yolks by hand with a whisk until creamy, 1 to 2 minutes. In the bowl of an electric mixer fitted with a whip attachment, beat the whites on medium speed until soft peaks form, about 5 minutes, then slowly add 1/4 cup sugar. Turn the speed to high and beat until stiff peaks form, about 2 minutes. Using a rubber spatula, gently fold the egg whites into the yolk mixture. Fold in the vanilla, then gradually sprinkle in the cake flour and mix gently. Spread the batter into the prepared baking tray and bake for 10 to 12 minutes, until the cake feels spongy.
